
Il Vigneto is a quaint, small hotel close to the coast, located in a slow-paced fisherman’s village. The rooms are welcoming and romantic with vineyard views and there’s ample, outdoor breezy dinning. The rooms are warm and romantic with great views of the local hills. The hotel is fairly close to the delicious beaches of Porto Palo. The hotel’s expansive garden is home to a restaurant featuring local fish dishes and traditional pasta preparations. I had a chance to help make a typical pasta “alla carrettiera,” a simple tomato-based sauce with garlic and oil, with chef Sandro Bursi. He is an excellent intructor as to how essential the “mantecatura,” or mixing of sauce with the pasta, is to the overall dish. It’s just one of those little secrets that great Sicilian chefs in the Terre Sicane are happy to share.
